This Chocolate Blueberry Banana Oatmeal is so easy to make, healthy, and a great breakfast, snack or dessert!

I had some really ripe bananas to use up but I didn’t want to make banana bread so I got some inspo and put this together. I sprinkled some chocolate chips on top to make it a little more sweet and dessert like.

Instructions

Chocolate Blueberry Banana Baked Oats

  • 2 1/4 cup oats (I used quick oats)
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 cup ripe mashed bananas (approx. 2 large bananas)
  • 3/4 cup milk (I used almond milk, use your milk of choice)
  • 1/4 cup honey
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cup frozen or fresh blueberries
  • chocolate chips! (your preference)
  1. Preheat oven to 350 degrees F. Spray an 8-inch square baking pan well with non-stick cooking spray and set aside.

  2. In a large mixing bowl, mix together the oats, baking powder, cinnamon and salt. Set aside.

  3. In another mixing bowl, mix together the mashed banana, milk, honey, egg and vanilla extract.

  4. Add the wet ingredients to the dry ingredients and mix well until everything is combined.

  5. Gently add the blueberries. Making sure not to mix too hard and turn the dish purple.

  6. Pour the mixture into the prepared sheet and smooth it out into one even layer.

  7. Top with preferred amount of chocolate chips if you would like.

  8. Bake at 350 for 30-40 minutes, until the top is set and golden brown.

  9. Remove from oven and let cool a little bit, I like to eat it when it's still warm!

  10. I topped it with So Delicious Dairy Free Cocowhip!
